Sweet Golden Cornbread

No chili dinner is right without a side of homemade cornbread! This easy cornbread recipe has the crisp golden crust you crave but without any inflammatory ingredients a traditional boxed cornbread offers.

You’ll notice that I opted for this Sweet Golden Cornbread to be made with Masa Harina instead of standard cornmeal. This is because Masa Harina is the traditional grain for making corn tortillas and it actually has a more savory flavor that you won’t find in cornmeal. This balances out the sweetness from the coconut sugar very nicely.

Made without dairy, wheat or refined sugar (but you can always substitute the ingredients with a quality butter, flour or cane sugar if that’s what you have on hand or it agrees with your stomach), this Sweet Golden Cornbread provides a way to enjoy a sweet side to your savory chili.

Ingredients
  

  • 1 cup gluten free flour (or all-purpose if not GF) I like Bob's Red Mill 1:1 Baking Flour
  • 1 cup Masa Harina I like Bob's Red Mill brand
  • 2/3 cup coconut sugar
  • 1 tsp salt
  • 3 1/2 tsp baking powder
  • 1/3 cup melted coconut oil If not dairy free, you can use a quality grass-fed butter instead
  • 1 egg To make vegan, use Bob's Red Mill Egg Replacement or the flax egg method
  • 1 cup milk of choice I use almond milk

Instructions
 

  • Preheat the oven to 400℉ and line a square baking pan with parchment paper, or grease a cast-iron skillet. Set aside.
  • In a medium mixing bowl, add all dry ingredients (flour, Masa Harina, coconut sugar, salt, baking powder) and whisk together.
  • Create a well in the center of the dry ingredients and add all wet ingredients (melted coconut oil, egg, milk). Stir until the mixture comes together and only a few lumps remain. Consistancy should be solid, not runny.
  • Pour batter into the prepared pan and spread with a spatula until batter is about 1/2 – 1 inch in thickness depending on your size of pan. Place into oven and bake for 25 minutes until the top is crusted and an inserted toothpick into the center comes out clean.
  • Serve hot!
