Mediterranean Eggplant Pizza

I LOVE this super easy gluten-free way of making pizzas on pizza night. While the boys dish up a good pepperoni pizza from the shops, I’ll make my eggplant pizza and we can all have pizza night together without the headache of making a gf crust or buying a gf/df (gluten free/dairy free) frozen pizza that is filled with many ingredients in it I don’t love. 

Mediterranean Eggplant Pizza

A great option for a natural gluten-free pizza crust is using EGGPLANT! Can be made on a traditional pizza crust as well.

Ingredients
  

  • 1/2 Eggplant
  • drizzle of Olive oil
  • 1/4 cup Marinara sauce I like to use a traditional sauce (Ragu Simple brand is a great pantry staple at a budget cost)
  • Minced garlic
  • Cheese of choice I like using Chevre goat cheese or vegan Mykonos mozzarella
  • 2 Mushrooms
  • 6 Kalamata olives
  • 3 Cherry tomatoes
  • 1/5 block Tofu [OR MEAT OF CHOICE] A great meat option here would be prosciutto
  • small handful spinach
  • 1 tsp Italian Seasoning
  • drizzle of Balsamic vinegar

Instructions
 

  • Preheat the oven to 400℉
  • Cut eggplant into about 1/2-3/4 inch pieces. You'll need 4-5 pieces per person/serving
  • Coat both sides with olive oil and place on a pan
  • Sauce the top all the way to the edges with the marinara
  • Add desired amount of minced garlic on top of the marinara sauce and spread it around
  • Top with cheese, mushrooms, olives, tomatoes, protein of choice, spinach and seasoning
  • Place pan in the oven on the middle rack and bake for roughly 12 minutes. Pizzas will be ready when you can easily pierce the eggplants with a fork.
  • Once cooked, place on your plate, and drizzle with balsamic vinegar and enjoy!
