Mediterranean Eggplant Pizza
A great option for a natural gluten-free pizza crust is using EGGPLANT! Can be made on a traditional pizza crust as well.

- 1/2 Eggplant
- drizzle of Olive oil
- 1/4 cup Marinara sauce I like to use a traditional sauce (Ragu Simple brand is a great pantry staple at a budget cost)
- Minced garlic
- Cheese of choice I like using Chevre goat cheese or vegan Mykonos mozzarella
- 2 Mushrooms
- 6 Kalamata olives
- 3 Cherry tomatoes
- 1/5 block Tofu [OR MEAT OF CHOICE] A great meat option here would be prosciutto
- small handful spinach
- 1 tsp Italian Seasoning
- drizzle of Balsamic vinegar
Preheat the oven to 400℉
Cut eggplant into about 1/2-3/4 inch pieces. You'll need 4-5 pieces per person/serving
Coat both sides with olive oil and place on a pan
Sauce the top all the way to the edges with the marinara
Add desired amount of minced garlic on top of the marinara sauce and spread it around
Top with cheese, mushrooms, olives, tomatoes, protein of choice, spinach and seasoning
Place pan in the oven on the middle rack and bake for roughly 12 minutes. Pizzas will be ready when you can easily pierce the eggplants with a fork.
Once cooked, place on your plate, and drizzle with balsamic vinegar and enjoy!
