Fast and Simple Dairy Free Rice Crispy Treats

Being lactose intolerant and gluten free, I always struggle with food at bbq’s, especially at the dessert table. But not anymore! These dairy and gluten free crispy treats are the perfect dessert to add to the table at any party. Plus they only take about 10 minutes to make and don’t melt in the sun!

When thinking about our ingredients in this dessert, I wanted to make sure I had the best taste possible made with the best swaps I could find. That’s why I went with a Rice Chex cereal versus a Rice Krispy cereal and an unrefined coconut oil and pure vanilla extract combo versus a butter.

While both cereals have sweeteners in them, the Rice Chex cereal is made with added sugar and molasses, versus the Rice Krispy cereal, which is made with added sugar and corn syrup. Corn syrup is an inflammatory processed sugar additive, therefore we want to stay away from it in our baking.

The coconut oil and pure vanilla extract in this recipe make a rich combination, which in turn is balanced by the added pinch of salt. This is the perfect swap for butter, and won’t make your tummy hurt after you eat them… unless you have a few too many, which is highly possible 😉

Ingredients

  • 1/3 cup coconut oil

  • 1 bag mini marshmallows

  • 1/2 tsp pure vanilla extract

  • pinch of salt

  • 4.5 cups rice chex cereal

Directions

  • heat coconut oil on medium heat in a pot
  • once melted, add in your marshmallows, leaving about 1 cup left over
  • add in vanilla extract and salt and stir stir stir
  • pour in your rice chex cereal and mix together
  • once mixed, finish adding in your left over marshmallows and mix until combined
  • place mixture into your serving pan and spread until even
  • decorate!
