Grandma Vera’s Very Easy and Addicting Cowboy Caviar

This recipe is very near and dear to my heart, as it’s my grandma’s long-time made Cowboy Caviar recipe. I strictly remember her making this the first time for the family while we were at the beach when I was 8. She opened cans, cut up tomatoes, avocado and fresh cilantro, mixed in some spices and put the bowl on the table with some chips. When I tasted it, I knew I was a goner as I wanted to hoard the WHOLE BOWL to myself… it’s easy to say that the appetizer didn’t last very long between 5 people chowing down – and we wanted more.

Fast forward to today, and it’s become not only a summer staple in my household but also a MUST for taco night when entertaining. I’ve made it for multiple parties and the outcome is always the same – “Wow this is addicting… Can I get the recipe?”

I love this recipe because it’s full of whole ingredients that are highlighted with every bite, but only takes 10 minutes to whip together and share with your loved ones.

So in light of my grandma sharing this Cowboy Caviar dish with me, I’d like to share this dish now, with you.

Note: If making this for an event, consider doubling the recipe so you have some to hoard for yourself afterward 😉

Grandma Vera’s Cowboy Caviar

Prep Time 10 minutes
Marinade Time (optional) 30 minutes

Ingredients
  

  • 1 can black eyed peas
  • 1 can whole corn
  • 2 avocados
  • 1 tomato
  • 1 bunch green onions
  • 2/3 cup chopped cilantro
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar (or lime juice)
  • 1 tsp minced garlic
  • 1 tsp cumin
  • 1/4 tsp black pepper
  • 1/2 tsp salt

Instructions
 

  • Rinse black eyed peas and corn in a strainer over the sink
  • Combine all ingredients in a medium-sized bowl
  • Mix well and cover
  • Enjoy immediately with tortilla chips or place in the fridge for 30+ mins to marinate (recommended)
